Greek stuffed turkey burger topped with cucumber slices and tzatziki yogurt sauce served with Mediterranean street cart fried potatoes with feta cheese olives herbs and spices

Ingredients:

  • 6 ounces baby spinach* or sub in thawed frozen spinach cubes

  • 5 cloves roasted garlic finely chopped

  • 1 teaspoon olive oil

  • 1 1/2 pounds extra-lean ground chicken

  • 4 ounces crumbled feta cheese

  • 1 teaspoon Dijon mustard

  • 1 teaspoon hot sauce

  • ½ teaspoon salt

  • 1/4 teaspoon black pepper

Suggest using a small whole wheat bun, wrap, or lettuce wrap.

Garnish of choice: sliced avocado, fresh tomato, arugula, extra feta crumbles, lettuce, pickles

Servings: 5

Steps:

  1. Preheat the oven to 375 degrees. Add garlic cloves to a baking dish w/ a splash of olive oil and roast for 10 minutes.

  2. Heat a teaspoon of olive oil in pan on medium heat. Add spinach to pan and cook for 2-3 minutes.Place cooked spinach in a strainer and press out any excess moisture.

  3. Chop cooked spinach and roasted garlic. Add it to a mixing bowl with the chicken, feta, mustard, hot sauce, salt, and pepper.

  4. Mix everything together until all of the ingredients are evenly distributed. Form into 5 burger patties that are at least ¾ of an inch thick.**

  5. Preheat grill to medium-high. Use a paper towel/tongs to carefully rub olive oil onto grill grates to prevent from sticking. Place the burger patties onto the grill and let cook for 5-6 minutes. Flip the burgers and cook for another 5-6 minutes, or until the burgers release from the grill and the interior temperature of the thickest part of the burgers reaches 165°F. 

  6. Serve the burgers on a bun, salad or lettuce wrap. Garnish and serve!

Recipe modifications: may use frozen spinach (drained) to save time or minced garlic. Add any other desired spices or seasonings.
