Bariatric-Friendly Cowboy Caviar Dip Recipe

One popular recipe this summer has been cowboy caviar. It's a great way to incorporate many summer vegetables into your diet and can be easily customized based on food preferences. Check out the recipe below.

Ingredients

  • 1 1/2 cups cooked black beans, drained and rinsed
  • 1 1/2 cups cooked black-eyed peas, drained and rinsed
  • 2 cups cherry tomatoes, halved
  • 1 cup corn kernels
  • 1 red bell pepper, stemmed, seeded and diced
  • 1/2 cup diced red onion
  • 1 medium jalapeño pepper, finely chopped
  • juice of 1 lime
  • 1 large avocado, pitted and diced
  • 1/4 cup cilantro
  • Blue corn tortilla chips, for serving
  • ½ cup diced mango (optional)

Dressing:

  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne
  • ½ teaspoon honey
  • 1 clove garlic, minced
  • 1 1/2 teaspoons sea salt
  • ½ teaspoon ground black pepper
