Foil with cooked salmon fillet on color background

Ingredients:

Serves 8

  • 2 pounds of fresh salmon

  • 2 small limes, lemons or oranges

  • Fresh herbs of choice (dill, rosemary, basil, tarragon or parsley)

  • 2 tbsp of olive oil

  • Aluminum foil

Directions:

  • Wash hands with warm water and soap.

  • Wash all produce under cold running water.

  • Preheat grill to medium/medium high temperature. 

  • Spread 4-5 twigs of  fresh herbs of choice on a large sheet of aluminum foil coated with cooking spray.

  • Lay salmon skin side down on top of herbs, brush olive oil over top of salmon.

  • Juice one lemon, lime or orange. Thinly slice other lemon, lime or orange.

  • Evenly drizzle juice from one fruit on top of salmon. Layer the slices of fruit and 4-5 more twigs of herbs of choice on top of the salmon.

  • Fold the foil around the salmon and form a seal leaving a little room for air in foil pouch.

  • Carefully place foil with salmon in it on hot grill and cook for about 20 minutes or until fish reaches 145 degrees fahrenheit with a meat thermometer. Remove from grill carefully and let sit for a few minutes. Take caution for hot steam to escape when foil pouch is opened. 

  • Serve with roasted sweet potatoes and a fresh green leafy salad.
