Halloween Fun- Baked Tortilla Chips

Ingredients:

  • 4 high protein tortilla wraps

  • Cooking Spray (avocado or olive oil preferred)

  • Choice of seasoning (savory- salt, paprika, garlic powder, chili powder or sweet- cinnamon and zero sugar sweetener)

  • Halloween cookie cutters

Instructions:

  • Wash hands with warm water and soap.

  • Preheat oven to 375 degrees F. Lightly grease a cookie sheet.

  • Cut out Halloween shapes using cookie cutters from your tortillas.

  • Put shapes on your prepared baking sheet. Spray tortilla shapes with cooking spray and sprinkle with preferred seasoning.

  • Bake at 375 degrees for 5-7 minutes, and enjoy!

Savory Southwestern Dip

Ingredients:

  • 1.5 cups low-fat cottage cheese 

  • 2-3 tbsp green chilis

  • 1 can Ro-Tel tomatoes with green chilies

  • 2 cups black beans, rinsed

  • 1/3 cup shredded low-fat Mexican cheese or low-fat cheddar cheese

  • 2 tbsp taco seasoning (or mixture of 1 tsp each of chili powder, cumin, paprika, garlic powder, onion powder, and oregano)

  • 1/2 cup black olives, sliced

  • ¾ cup sliced green onions, for garnish

  • 1/4 cup low-fat sour cream or plain Greek yogurt, optional

Instructions:

  1. Wash hands with warm water and soap.

  2. Add 1.5 cups of cottage cheese with chili peppers to blender and mix. Pour mixture into a    bowl, and stir in seasonings.

  3. Stir in one can of Ro-Tel tomatoes with green chilies and 2 cups of black beans (rinsed). You can also just spread the mixture on the bottom of large glass dish and add the tomatoes and black beans on top.

  4. Use a spoon to mix gently. Layer this on the bottom of a small glass dish or round bowl.

  5. Top with shredded cheese, chopped green onions, and sliced black olives. Enjoy!

*Serve with savory seasoned tortilla chips

Pumpkin Mousse Dip

Ingredients:

  • 1 cup low-free cottage cheese

  • 1 scoop of vanilla protein powder (or unflavored protein powder)

  • 1/3 cup pumpkin puree

  • 1 teaspoon pumpkin pie spice

  • 3 tbsp monk fruit

Instructions:

  • Wash hands with warm water and soap. 

  • Add all ingredients into the blender and mix until smooth

  • Serve immediately or place in the refrigerator to chill (it will get thicker in the refrigerator)

*Serve with cinnamon sugar baked tortilla chips.
