Ingredients:
Serves 6
1 box chickpea pasta (shape of your choice)
1/3 cup sun-dried tomatoes in oil, chopped
1/3 cup kalamata olives, sliced
1 cup low-fat feta
1 cooked chicken breast, cubed or shredded
1 cup grape tomatoes, washed and cut in half
4 cups baby spinach, washed and torn in bite sized pieces
2 green onions,washed and thinly sliced
salt and pepper to taste
Dressing Ingredients
1 tsp dijon mustard
1 tsp minced garlic
3 tbsp red wine vinegar
1 tsp iitalian seasoning
pinch of salt and pepper
3 tbsp olive oil
Instructions:
1. Wash hands with warm water and soap.
2. Cook pasta according to directions on box.
3. Mix together all ingredients for dressing and set aside.
4. Once pasta is cooked, drain and add to a large bowl.
5. Layer the ingredients on top of pasta and gently toss using a large slotted spoon.
6. Pour dressing on top and toss again. Taste for seasoning and refrigerate for 2 hours to increase flavors and serve. Can be served immediately if pressed for time. Enjoy!
