Ingredients:

Sauce:

  • ½ cup fresh parsley, chopped

  • ¼ cup fresh basil, chopped

  • ½ cup cilantro, chopped

  • 2 tbsp olive oil or avocado oil

  • 2 tbsp. red wine vinegar

  • 2 cloves garlic

  • ½ tsp red pepper flakes

  • ½ tsp cumin

  • 1 tsp minced onion

  • ½ tsp sea salt

Kebobs:

  • 1 lb boneless, skinless chicken breast, cubed

  • 1 onion

  • 1 cup grape tomatoes or sweet peppers

  • 1 cup mushrooms

Instructions:

  1. Wash hands with soap and warm water.

  2. Add all ingredients for sauce, to a blender and blend using the high setting until mixture is well combined and set aside.

  3. Combine the chicken pieces and sauce from step 2 in a large resealable plastic bag. Let marinate for 20 minutes- 2 hours in the refrigerator. If using wooden skewers, soak in water for 30 minutes as well.

  4. Wash all produce and dry. Slice into thick pieces to be able to thread onto skewers. Place chicken and vegetables onto skewers, alternating between chicken and vegetables.

  5. Heat an outdoor grill to medium high heat. Add chicken kebabs and cook approximately 6 -8 minutes per side, turning once. Once internal temperature reaches 160 F, remove from grill. Allow to cool slightly and remove chicken and vegetables from kebabs and serve.
