Turkey Soup with wild rice

Cream of Turkey and Wild Rice Soup

Ingredients:

  • 1 tbsp olive oil

  • 2 cups mushrooms, sliced

  • ¾ cup celery, chopped

  • ¾ cup carrots, chopped

  • ¼ cup shallots, chopped

  • Salt and pepper to taste

  • 4 cups chicken broth, low sodium

  • 1 cup wild rice or leftover rice

  • 3 cups cooked turkey, chopped or shredded

  • ½ cup low fat sour cream or greek yogurt

  • 2 tbsp fresh or 2 tsp dried parsley

Steps:

  1. Heat oil in a large saucepan over medium heat. Add mushrooms, celery, carrots and shallots; cook, stirring, until softened, about 5 minutes. Add flour, salt and pepper; cook, stirring, for 2 minutes more.

  2. Add broth and bring to a boil, scraping up any browned bits. Add rice and reduce heat to a simmer. Cover and cook until the rice is tender, 5 to 7 minutes. Stir in turkey (or chicken), yogurt (or sour cream) and parsley; cook until heated through, about 2 minutes more.
