
Cream of Turkey and Wild Rice Soup
Ingredients:
1 tbsp olive oil
2 cups mushrooms, sliced
¾ cup celery, chopped
¾ cup carrots, chopped
¼ cup shallots, chopped
Salt and pepper to taste
4 cups chicken broth, low sodium
1 cup wild rice or leftover rice
3 cups cooked turkey, chopped or shredded
½ cup low fat sour cream or greek yogurt
2 tbsp fresh or 2 tsp dried parsley
Steps:
Heat oil in a large saucepan over medium heat. Add mushrooms, celery, carrots and shallots; cook, stirring, until softened, about 5 minutes. Add flour, salt and pepper; cook, stirring, for 2 minutes more.
Add broth and bring to a boil, scraping up any browned bits. Add rice and reduce heat to a simmer. Cover and cook until the rice is tender, 5 to 7 minutes. Stir in turkey (or chicken), yogurt (or sour cream) and parsley; cook until heated through, about 2 minutes more.
