• 1.5 cups cherry tomatoes halved
  • 1 English cucumber quartered
  • ¼ cup Cilantro and ¼ cup parsley chopped
  • 2 avocados diced
  • 1 small shallot or red onion thinly sliced
  • ½ cup Feta cheese
  • ¼ cup Red Wine vinegar
  • Salt and pepper to taste

Cut up all veggies and place tomatoes, cucumber and shallot in a large bowl. In a separate bowl mix together chopped parsley, cilantro, salt, pepper and red wine vinegar. Pour the herb and vinegar mixture over the tomatoes and cucumbers. Let sit in refrigerator for 30-60 minutes. Before serving sprinkle feta cheese and avocado chunks on top. Lightly stir in to coat w/ dressing.
